Cooking and eating Lobsters

How to eat a lobster?

There are many different ways to eat lobsters.
this is the basic way to eat a cooked lobster

How to Eat the Lobster’s Legs

Grasping the lobster by its back, gently twist the legs so that they come away from the lobster at their base. You can then get little bits of meat and lobster juice out of the legs by breaking them at the joins and biting and sucking on their ends. You may also be able to remove strings of meat using your lobster fork.

How to Eat the Lobster’s Claws

As you did with the legs, twist the claws so that they come away from the lobster at their base. You’ll now have what looks like an “arm” with a claw at the end. Break off the arm from the claw at their point of connection.

Eat the Meat in the “Arm”

Use your lobster fork to remove the meat inside the arm. You may have to use the nutcracker to open up the shell further in order to get at the meat fully.

Eat the Meat in the Claw

The claw looks like a mitten, with a “thumb” opposing the rest of the claw. First, pull away the thumb from the claw with your fingers. You can usually pull the meat from the thumb by just spearing it and pulling it with your lobster fork.
To get at the meat in the part of the claw, use your nutcracker to crack and remove the tip of the claw. Now the claw will have holes at both ends—at its tip, and at the “wrist” where it met the “arm.” Insert a finger or your lobster fork into the hole at the tip of the claw and push the meat out the hole at the wrist.

How to Eat the Lobster’s Tail

With one hand, firmly grasp the top of the lobster’s back. With the other hand, grasp the lobster’s tail in the same way. Twist the two parts of the lobster in opposite directions until they separate. At this point, you have two different ways to get at the tail meat.

How to cook lobster?
The most common ways of cooking lobster are to steam them or to boil them.
Boiling: How to boil lobsters
Fill a pot (large enough to hold the lobsters) anywhere from one-half to two-thirds full with water. Add 2 tablespoons of salt for each quart of water. (If sea water is available, even better. Skip the salt.) Bring the water to a strong boil over high heat.
Place the live lobsters in one at a time, headfirst, completely submerging them. Pick up the lobster by holding the upper side of the thorax between your thumb and middle finger. Hold the underside of the body away from you, because the lobster have a tendency to flip the jointed tail, splattering water. You can cook more than one lobster in a pot as long as there is enough room and water to cover the lobsters. (If you do not have a big enough pot use two smaller pots or cook your lobsters in batches.) Cover the pot tightly and return to a boil as quickly as possible.
After the water boils start timing, and regulate the heat to prevent water from boiling over (but be sure the water continues to boil). Melt some butter while you wait.

Jay's Cooking and Eating of Lobster

Ways to cook a lobster?
There are a number of different ways too cook lobster. Three of the most popular ways too cook are Boiling, Steaming, and Grilled. Boiling is one of the simplest ways to cook a lobster. Steamed Lobster is a great way to cook but not overcook a lobster's delicate meat. This setup will work well on a stove top, but if you're feeding more than eight people, it would be a good idea to cook the lobsters in a large stockpot on a propane "crab boil" burner outside.

How to eat a lobster tail?
With one hand, firmly grasp the top of the lobster’s back. With the other hand, grasp the lobster’s tail in the same way. Twist the two parts of the lobster in opposite directions until they separate. At this point, you have two different ways to get at the tail meat.
How to kill a lobster?
Make sure the rubber bands around the claws stay on during this process, as you don't want to be dodging the claws while cutting up the lobster. You must first cut it in half down the center. This job is one that is best left to a 10 inch chefs' knife, and one with a good deal of heft. With the lobster sitting where the tail curls towards the table, flatten it out and in one hand grasp the tail where it joins the body. In the other hand, take the knife's point and aim for the place an inch or an inch and a half from between the eyes towards the tail. The blade of the knife should be facing away from your hand that is holding the tail. Press the point of the knife into the head at that point until the point of the knife goes all the way through the lobster's head to the cutting board, then bring the blade down between the eyes to finish the cut of the head. This kills the lobster as quickly and painlessly as possible. Some say that you can 'hypnotize' a lobster by rubbing the top of its head or its abdomen, thereby pacifying it before boiling. The theory is that the adrenaline produced by a frightened lobster adversely affects the texture and flavor of the meat.

Types of Lobster?
Quite simply, there are two different types of lobsters available to diners – the clawed lobster and the spiny lobster. It’s easy to tell the difference by appearance but there are also some differences as far as what’s inside. economics

What is the average price of a lobster?

The lobster industries fluctuate from high to low each season usually in the summer is when you can find the best price for the lobsters. An average lobster retail would sell for 9.95$ for about 2 pounds of lobster. The lobster fisherman will normal sell his lobster to the store for about 3.00$ this gives the restaurant roughly 4.25$ of profit. The restaurant makes more than the average fisherman every lobster they sell. Quote from Mr. Weeks lobsterman” we get paid by a pound and it varies from quality’’

How much money has been lost because of gas prices? Cape cod fisherman Dave casmi says in his interview Cnn “is it even worth untying my boat in todays economy” gas prices have largely impacted the fisherman it cost roughly 4.00$ a gallon of diesel A boat that carries 300 gallons of diesel would spend about 1200$ to fill. The fisherman will spend about 2.00 a lobster and sells them for about 3 to 4 dollars this only leaves about a 2.00 to 1.00 of profit.

How long does the lobster season go for? *
A New England lobsterman season will start in April and end in February there is not much time for a fisherman to make his profit for the year. They will usually have a 2 month brake were they can loose a lot of money depending on the fisherman’s spending habits.
How does the economy of the United States affect the purchase of lobster? The economy of the United States affects the every day fisherman for many reasons if the average fisherman only makes a dollar or two profit. The diesel prices go up he can get to a point were he’s nearly braking even also. If the demands for the lobster go down because restaurant’s cant sell them because there two much money for the command person then this will soon kill there market and the fisherman that can’t survive this wave will go out of business.

Economics of Lobster Fishing

How much does it cost to start a lobstering business?
To start a lobstering business, one needs the necessary equipment. Some of the main lobster fishing equipment are a boat, lobster traps, sonar and radar devices for the boat, and a hydraulic lift. Boats can vary on prices, and lobster traps can cost from $40-70 depending on the quality. Sonar and radar devices are also expensive and so is the hydraulic lift. These cost probably around a couple hundred thousand dollars, not including the price of diesel fuel which rises and lowers.

What is the average profit of lobstering?
Although the salary of lobster fishermen vary on how much lobster is caught during the season, the average salary is $48,000 according to simplyhired.com.

How is the pricing of lobster decided?
The pricing of the lobster is determined by the pound and by its quality. It is also heavily dependent on the amount of supply and demand. The market price is already determined monthly by the National Marine Fishery Service Office of Science & Technology, so the restaurants cannot change the price of lobster.

How does an economic recession affect the price of lobster?
Unemployment and household income have an inverse relation. As unemployment increased, income decreases. Now as this household income decreases, foods such as lobster, that can be expensive, is not bought as often. Therefore the price of lobster is decreased and the supply exceeds the demand. The recession is not good for the lobster fishing business and for the lobster fishermen.

Economy effect on Lobster

How has the economy made the lobster industry less profitable?
The price of everything in the lobstering business is going up, except the price of lobster when sold by the lobsterman. They receive as little as $2 to $2.50 a pound for their catch, which is the lowest it has been in 30 years. Although the price escalates to $17 a pound or higher by the time a customer orders a lobster in a restaurant, so they only person take a hit is the lobsterman and the restaurants are benefiting from the low rates. The price of lobster fluctuates with how far it is traveling.

How much of the lobsters are actually edible?
You never really know what you are getting when you buy an abundance of lobster off the boat it is always a gamble. A crate of lobster averages 90 pounds when the lobsters are soaked in water. As the water leaks out and they dry off, that weight shrinks to about 87 pounds by the time a dealer gets the crate to a facility to sort the lobsters for quality, so a dealer paid for 90 pounds of lobster but got only 87 pounds. Of that, some are dead or broken, which makes it even less profitable, dealers say. Dealers then sort the lobsters for quality and hardness. The strongest lobsters get sent to the "live" market retail stores and restaurants.  Of an average order of 120 crates at 90 pounds each, about only 17 crates may be usable for the live lobster market, said Kerin Resch, owner of Eastern Traders in Nobleboro. The rest goes to processors.
What is the difference in price of lobster off a boat to in a store?
The price of lobster a lobsterman earns is going down and down every year while the price in stores and restaurants is staying steady or even going up still as high $17 dollars which is about 750% higher than it is sold off a lobster boat and brought too a co-op or dealer. For a lobsterman every expense is rising from gas to just the everyday cost of operating the lobster boat. For example some fishing boats hold 300 gallons of diesel at 4 dollars a gallon, which would translate too around 1200 dollars, too fill the tank.

How much do certain states relay on the Lobster Industry?
Lobster has a major contribution to many states economy. Maine generated almost $331 million in “dock value”. The fishery supports businesses such as processors, dealers, marine outfitters, boat makers, retailers and restaurants. The lobster industry supports hundreds of small, coastal villages and communities. Low prices and market excess may be the biggest problems many Maine lobstermen had to deal with this year according to the Portland Press Herald.
